Sweet & Spicy Glazed Salmon

Hi Ya'll! 

I have a DE-Licious recipe to share today!!  This is one of My Honey's all time favorite meals!  And it's HEALTHY!  Go figure!! 

I found the recipe at myrecipes.com.  If you've never used this website, you're missing out on some seriously amazing recipes.  You can sort by all different things.  You can find heart healthy recipes, low calorie, diabetic, etc, etc, etc. 

Here's the recipe

Ingredients
  • 3 tablespoons dark brown sugar
  • 1 tablespoon low-sodium soy sauce
  • 4 teaspoons Chinese-style hot mustard (Or just any spicy mustard! I used Grey poupon.) 
  • 1 teaspoon rice vinegar
  • 3-4 (6-ounce) salmon fillets (about 1 inch thick)
  • Cooking spray (I love the Pam Butter Spray!)
  • 1/4 teaspoon salt (I use the Morton Light Salt!) 
  • 1/4 teaspoon freshly ground black pepper


All the ingredients

Preparation:
  • Preheat oven to 425°.
  • Combine first 4 ingredients in a saucepan; bring to a boil. Remove from heat.
  • Place fish on a foil-lined jelly roll pan coated with cooking spray; sprinkle with salt and pepper. Bake at 425° for 12 minutes. Remove from oven.
  • Preheat broiler.
  • Brush sugar mixture evenly over salmon; broil 3 inches from heat 3 minutes or until fish flakes easily when tested with a fork.

 Combine these ingredients in a small saucepan

or if you've had too much wine like I did, in a bowl that you're just getting dirty because you have to pour it all in the saucepan!


Bring to a boil. 
You might as well just stay right by the stove b/c
 it will come to a boil fast and you don't want a burned glaze!


Cover your pan in foil
(they say a jelly roll pan.  WTF is that?)

 Spray the crap out of it with Pam or cooking spray

 Salt + Pepper each side of the salmon

 Coat the salmon with your glaze and broil as directed.


While your salmon is cooking, put a bag of "Boil in Bag" Success Rice in a pan to boil.  It makes a GREAT side w/ this salmon!!

This rice is just too easy!  Throw the bag in water and boil.  That's it.

Add some steamed veggies (we had asparagus) and you have a complete, healthy meal!
