Skinny Sour Cream & Chicken Enchiladas

Hi Ya'll!

I have a yummmmy recipe to share today!
I found it on Pinterest years ago...like it was one of my first pins...but for some reason I'm just now making them!
Ingredients
• 16 oz. fat free sour cream
• 1 can fat free cream of chicken soup
• 1 tbls. fresh chopped cilantro (1/2 tbls. dried)
• 2 1/2 cups cooked shredded chicken breast (I recommend boiling this the night before)
• 1 can Mexican Rotel
• 1 cup chopped onions (optional)
• 8 low carb tortillas
• 1 cup shredded pepper jack and colby cheese blend
• 1 can diced green chilies

Take random pictures of your kitchen while waiting for the chicken to boil.

Seriously, boil your chicken the night before if you're making this on a work night.
If you do, it will take no time at all to make these puppies!

Directions
In a saucepan, mix together sour cream, soup and cilantro. Heat through and set aside.

Combine the chicken, rotel, onions and green chilies in a pan sprayed with cooking spray. Heat until onions are transparent. Or if you omit onions like I have done, for a few minutes to blend the flavors and juices.

Warm the tortillas until flexible. (I microwave them for 10 seconds sandwiched between two damp paper towels.)
Fill each tortilla with about 2 tbs. of the chicken mixture.
Top with about 1/2-1 tablespoon of cheese
Roll the tortilla up and place seam side down (or they will unravel and you will be annoyed.) in a 8×11 dish sprayed with cooking spray.
Pour/Spread the sour cream sauce over enchiladas
Top with the remaining cheese
Bake at 350°F for 25-30 minutes until bubbly and cheese is melted.

 Seriously delish.
If you love sour cream like me
(I may have been known to eat just a spoon full)

A few tips from me:
Be sure to stir the sauce...a lot or it will burn.
This makes 8 enchiladas.  If you are childless, like us, I recommend halfing the recipe.
We have leftovers for lunch, dinner and my prego bff is getting lunch tomorrow too.
Boil your chicken the night before if making on a weeknight.

Sorry I'm Not Sorry....

Hi Ya'll!

I'm trying out a new link up today with these lovely ladies...Staci (she's hilarious and loves Britney), Sara, Kaitlyn, and Katelyn for Sorry I'm Not Sorry...

Sorry I'm Not Sorry...
I still love me some B-Spears.
She's Britney, bitch.
Period. End. of. Story.

Sorry I'm Not Sorry...
That I turn my alarm off about 100 times before I get up.
The Fiance wants to strangle me every morning.
He says "Just get up when it goes off..."
He doesn't realize that this is next to impossible for me...unless
1) I'm going on a fun trip
2) yeah...really just #1

Sorry I'm Not Sorry...
I speak my mind...before I think.
It's been cause for many  of those "hit yourself in the head" mornings after a long night out.
But hey, it's me and I don't plan on changing it.

Sorry I'm Not Sorry...
I'm bossy.
I'm the first girl to scream....no, wait, I'm not "bossy" like that...
I just know what you should be doing and how you should do it.

Sorry I'm Not Sorry...
I'm majorly addicted to Instagram.
I likely post random, sometimes dumb pictures.
If that annoys you...then don't follow me.
If you want to see the crap I post..go follow me.
There's an Instagram link up at the top right of my blog.
Or...my name is heather_thecurvylife

Sorry I'm Not Sorry...
I am 30, I still like to go to a bar and drink.
I don't have kids and I'm living it up while I still can.
If that's not your cup of tea, ok...but it's mine...with a shot of vodka in my tea, please.
I might even do this dance...
which I think the youngins are calling the Harlem Shake...
but it looks more like the "Like Bernie" to me....

Sorry I'm Not Sorry...
I love, love, love a good nap.
Not just a cat nap...a good nap.
Like a good 3 or 4 hours on Sunday.
Makes me one happy lady.

Sorry I'm Not Sorry...
The only thing that motivates me to get my fat butt to the gym
is the fact that I know I will get more calories to eat.
I see those shirts that say "I run so I can eat..."
If I was a runner I would totally say that...but I haven't earned that title just yet.

Go link up with these fun girls and tells us what you're not sorry for.

LOVE is in the Air!

Hi Ya'll!

I don't know about you, but I love, love.
Confession:  Before I found my true love I kind of hated love.  I thought it was way overrated and pretty much was jealous of hated anyone in love.

Today I'm going to share the few Valentine's decorations I have out and the "love" part of my hall collage.  I don't really get that into Valentine's Day because, to be honest, it comes way too soon after Christmas and aint nobody got funds for that..but I still love to celebrate my love.

Probably one of my fav decorations. My dining room table.
I used these at Christmas too w/ Christmas candy.
So fun!
The jars are from Kirklands-forever ago.
The tray is from a thrift store.
I got the vintage Valentine at an antique store in Frisco, TX-Frisco Mercantile

Entry decor.
The mirror was my great grandmother's and so special to me.

My momma got me this sign at Home Goods. Love it!

Another vintage Valentine from an antique store.

It's not Valentine's Day without Cupid!
I got this little guy at Frisco Mercantile.  LOVE that place!

When I moved into my house, I knew I wanted to do a hall collage like you see all over Pinterest!  Unfortunately, I had way too many pictures for the small hallway.  I had an idea for the remaining pictures...I made a "love" wall.  I had pictures of our grandparents and us in loving embraces.  It was perfect and so meaningful.

My hallway is small and skinny...getting a good, straight on picture is impossible!

My maternal grandparents - Moner & Granddaddy.
I love, love, love this picture.
My grandmother has this on her dresser mirror to this day.

The Fiance's grandparents - Granny and Pawpaw.
It's hard to tell from this picture of the picture but they are gazing so lovingly at each other.

The Fiance and I at a friends wedding.
Someone caught this picture of us and I love it!

My fraternal grandparents - Grandmother and Granddaddy.

So, do you love Valentine's Day and just LOVE in general or do you hate it?

Enjoy...the Curvy Life.
